Air Fryer Eggs & Bacon

Over the past three days I’ve been experimenting with our  Phillips Air Fryer  (Christmas present).

Up to this point the only thing we’ve cooked in it was fries and they were yummy.  But I’m looking to make mini meals with ramekins and I’ve started with breakfast.

My most recent test (today) was  Bacon & Eggs cooked in an Air Fryer.

Here’s how I made Bacon and Eggs in an Air Fryer ….  but remember, if you make it … the cooking time can differ based on the temperature. 

  1. Sprayed the bottom of the ramekins with Coconut Oil or your favorite non stick spray.
  2. Cut up two pieces of uncooked bacon and add to bottom of ramekins.
  3. Scrambled two eggs in bowl and poured over top of bacon.
  4. Add some Himalayan Pink Salt (or your favorite).
  5. Cook for 7 minutes.

It was pretty darn yummy … it was quick and easy and I could eat them at least five out of 7 days.  I may add some spinach tomorrow (and maybe some green peppers and onions.

Yesterdays test was just scrambled eggs in the Air Fryer.  It was good … but a little bland (needed more spice and next time I won’t add water to the eggs (I’m dairy free so milk is out).   By the way… that’s black pepper on the top 🙂

How I made the scrambled eggs ..

  1. Add a little Olive Oil to bottom of ramekins.
  2. Scrambled two eggs in bowl and added a tad of water.
  3. Poured in ramekins.
  4. Added Salt and Pepper.
  5. Cook for five minutes and then another five (still trying to master the right temp for eggs).

My first test was just eggs and it wasn’t the best, but I’ve had worse.

The result was a little over cooked … but what can I say it was the first time (I needed to raise the heat and decrease the time).

I’ll try fried eggs in the air fryer again …but in a wider but more shallow ramekins 🙂 I have some arriving this week that I ordered on Amazon.

Keto Shrimp

After three months of eating horribly (lots of soup, bread and pasta) I’ve decided I need to focus on my food choices again!!!

I started last night with this simple dish I’m calling Keto Shrimp …. which basically means if you’re following the keto diet you can eat this!!

I may have seen it called Keto Friendly Shrimp or Skinny Shrimp.

We buy our pre-cooked shrimp at Sams (big bag) and here’s how I made it but remember if you’re using raw shrimp the cook time will be different!

  1. Peel and wash 1-1/2 pounds of pre-cooked shrimp.
  2. Dry shrimp with a paper towel and add to a baking tray or cookie sheet (I cover with foil to make the clean up easy!!). 
  3. Sprinkle on Italian Seasoning, Salt and Pepper.
  4. Spiral cut or slice thinly a Lemon and place around shrimp.
  5. Melt one stick of butter and pour around shrimp.
  6. Bake @ 350 degrees for 15 to 20 minutes (depends on your oven).

It’s quick and easy to make!  It tastes yummy and it’s allowed on the Keto Diet!

Homemade Chicken Noodle Soup

Here’s how I make homemade chicken noodle soup.

  1. De-bone a rotisserie chicken (in the old days I used to cook a whole chicken in a stock pot but the rotisserie chicken tastes so much better).
  2. I add the chicken to a stock pot with water … about a third of the way up the pot.
  3. Cut up a full bag of real carrots (not those little things … they do not taste the same) and add it to the pot of water. Cut up one onion and four or five stalks of celery.
  4. Add a 1/2 stick of real butter to a skillet and cook the onions and celery. Once the onions and celery are nice and tender add it to the pot of chicken and carrots.
  5. Cut up one bunch of parsley (as small as possible … you can include stems if you want) and then add to pot.
  6. At this point you’ll notice the pot is becoming full … with very little liquid. You’ll need to add some chicken broth (start with two cans but you may need more).
  7. Add one tablespoon of LB Jamison’s Soup Base, one tablespoon of Wild Tree Garlic Galore Seasoning Blend, one tsp of basil, one tsp salt, one tsp black pepper and any other spices you would like.
  8. Add a can of corn (drain it) or a bag of frozen corn.
  9. Once the carrots are done … you can cook the noodles. I bring the soup to a boil and add one whole bag of the No Yolks egg dumplings and cook per the instructions on the bag (10 or 12 minutes).
  10. The whole process from start to finish is about 1-1/2 hours. Sometimes we make the Bisquick dumplings along with the egg noodles but it adds another 20 minutes of cooking time.
